The study was attended by 200 academics aged over 18 years old, Campo Real, College of Guarapuava-PR. were developed two preparations, a traditional brownie recipe and another with the replacement of wheat flour by flour of green bananas. To assess the acceptance of hedonic scale was used products of 9 points, and to evaluate the purchase intent, scale of 5 points. Through the analysis of comparison performed with Student's T-test, it was noted that the notes of global acceptance (p=0,046), color (p=0,044) and texture (p=0,015) were higher for the modified product. The acceptability of the sample by replacing the flour was 86,46%, indicating good acceptance. There has been greater demonstration of intention to buy the brownie with green banana flour (p=0,01). Analyzing the nutritional properties present in the product formulated with green banana flour, it can be said that your use is an ally in combating various chronic non-communicable diseases. With the data available, it is concluded that the green banana flour added in culinary preparations can be included in the market, mainly to assist in promoting the quality of life and health, as well as provide culinary innovations.

Many studies have shown that testis are sensitive to cadmium toxicity, leading to a decrease of male fertility. Researchers have observed an improved quality of semen with the use of dietary substances with antioxidant activity. Among them, the selenium possesses antioxidant activity and it is present in Brazil nuts. Aim: To analyze the effects of the extract from Brazil nuts on male rats reproductive parameters intoxicated by cadmium. Methods: We used 40 male Wistar rats, distributed into four experimental groups: CRTL (intraperitoneal injection of saline solution 0.9% and daily gavage with water 1.5mL), CAD (intraperitoneal injection of 1.2mg/kg of weight CdCl2 and daily gavage with water, 1.5mL), CAD+ECB (intraperitoneal injection of 1.2mg/kg of weight CdCl2 and daily gavage with Brazil nuts, 1.5mL) and ECB (intraperitoneal injection of saline solution 0.9% and daily gavage with Brazil nuts, 1.5mL). The treatment was made for 56 days. The following parameters were assessed: body weight gain, reproductive organs relative weights and glandules accessories, morphology and daily sperm production, histopathology for testis, morphometric analysis (tubular diameter and tubular area percentage), serum levels of testosterone and enzymatic activity of glutathione, catalase and superoxido dismutase. Results: After 56 days we observed increase in body weight for the groups which received Brazil nuts extract (p=0,001). The groups exposed to cadmium and treated with cadmium and Brazil nuts showed a decrease in gonadosomatic axis (p=0,001), relative weight dorsolateral prostate (p=0,001), relative weight of epididymis (p=0,001), daily sperm production (p=0,001), numbers of spermatozoa from epididymis tail and head/body segment (p=0,001) and sperm transit time through the epididymis (p=0,004) when compared to control group. It was observed an increase in catalase activity (p= 0,183), percentage of abnormal sperm in groups intoxicated with or treated with Brazil nut extract (p=0,001). It was noticed tissue degeneration when histopathological and morphometric analyses were performed for all groups exposed to cadmium. Brazil nut treatment was not able to reverse the morphologic alterations induced by cadmium. No significant statistically differences were detected to glutathione peroxidase activity (p=0,897) among groups. However, superoxide dismutase showed a decrease activity for all groups treated with Brazil nut (p=0,019). The level of testosterone serum increased in groups treated with Brazil nuts extract compared to the non-treated groups (p=0,009). Conclusion: The extract Brazil nuts were not able to attenuate or reverse cadmium injury in male rats reproductive parameters in a medium-term essay.
- ItemSomente MetadadadosGrape juice concentrate protects reproductive parameters of male rats against cadmium-induced damage: a chronic assay(Cambridge Univ Press, 2013-12-14) Pires, Vanessa Cardoso [UNIFESP]; Boiago Golluecke, Andrea Pittelli; Ribeiro, Daniel Araki [UNIFESP]; Lungato, Lisandro [UNIFESP]; D'Almeida, Vania [UNIFESP]; Aguiar, Odair [UNIFESP]; Universidade Federal de São Paulo (UNIFESP); Univ Catolica SantosThe aim of the present study was to investigate the effects of long-term grape juice concentrate (GJC) consumption, in two dosages, on the reproductive parameters of cadmium-exposed male rats. the effects of the concentrate on body mass gain, plasma testosterone levels, reproductive organ weights, daily sperm production, sperm morphology, testis histopathological and histomorphometrical parameters, and testicular antioxidant markers were investigated. Wistar rats (n 54) were distributed into six groups: CdCl2; cadmium and grape juice I (1.18 g/kg per d); cadmium and grape juice II (2.36 g/kg per d); grape juice I (1.18 g/kg per d); grape juice II (2.36 g/kg per d); control. A single dose of CdCl2 (1.2 mg/kg body weight (BW)) was injected intraperitoneally and the grape juice was administered orally for 56 d. the results indicated that cadmium changed all reproductive and antioxidant parameters. At dosage I (1.18 g/kg BW), GJC consumption did not show the effects against cadmium-induced damages. in contrast, at dosage II (2.36 g/kg BW), the GJC improved the gonadosomatic index (P=0.003), serum testosterone levels (P=0.001), the relative weight of epididymis (P=0.013) and ventral prostate (P=0.052), the percentage of normal sperm (P=0.001), and histopathological and histomorphometrical parameters. in addition, at this dosage, normalisation of the enzymatic activity of superoxide dismutase (P=0.001) and of testicular levels of glutathione (P=0.03) were observed. the parameters of the non-exposed rats did not depict significant alterations. in conclusion, the product was able to act as a protector of reproductive function against cadmium-induced damage. Such a property was expressed in a dose-dependent manner as the more effective dose was dosage II. the GJC acted possibly by antioxidant mechanisms.

On the other hand, nutrition and regular exercise can be an interesting strategy to modulate lipid profile, acting as prevention or treatment, inhibiting the risk of diseases due to its anti-inflammatory and anti-atherogenic characteristics. Additionally, the possibility of controlling different training variables, such as type, intensity and recovery interval, can be used to maximize the benefits of exercise in promoting cardiovascular health. However, the mechanisms by which exercise and nutrients act in the regulation of cholesterol and its fractions, such as reverse cholesterol transport, receptors and transcription factors involved, such as PPARs and their role related to exercise, deserve further discussion. Therefore, the objective of this review is to debate about non-medical approaches to increase HDL-c, such as nutritional and training strategies, and to discuss the central mechanisms involved in the modulation of lipid profile during exercise, as well as that can be controlled by physical trainers or sports specialists in attempt to maximize the benefits promoted by exercise. The search for papers was performed in the databases: Medline (Pubmed), Science Direct, Scopus, Sport Discus, Web of Science, Scielo and Lilacs until February 2016.
- ItemAcesso aberto (Open Access)Tecnologia e funcionalidade dos probióticos e prebióticos(Universidade Federal de São Paulo, 2023-06-29) Darviche, Munir [UNIFESP]; Yoshida, Cristiana Maria Pedroso [UNIFESP]; http://lattes.cnpq.br/3546808357732166; http://lattes.cnpq.br/6784791501283623Alimentos funcionais são alimentos, ou ingredientes alimentares, convencionais, que podem promover efeitos benéficos à saúde devido a presença de substâncias bioativas, que são componentes de alimentos (por exemplo, fibras, vitaminas, carotenóides, compostos fenólicos, microrganismos probióticos e outros) e possuem mecanismos de ação específicos no organismo. Dentre os compostos bioativos, têm-se os probióticos e os prebióticos. Os probióticos são microrganismos vivos, com capacidade de colonizar o trato gastrointestinal humano, promovendo melhorias à saúde intestinal e consequentemente, podem regular as respostas imunes do organismo. Os prebióticos são compostos não digeridos e que são utilizados como substratos energéticos para os microrganismos que colonizam o trato gastrointestinal dos seres humanos, promovendo uma seleção positiva de cepas colonizadoras no ambiente intestinal. Ambos os bioativos vêm sendo empregados em uma variedade de alimentos funcionais (com boas expectativas de crescimento no mercado global) - produtos lácteos e de panificação, sorvetes, sucos de frutas, chocolates, entre outros - de maneira isolada ou combinados, como uma alternativa de manutenção da saúde humana via microbiota intestinal, visto a influência dos microrganismos que colonizam o trato gastrointestinal para o metabolismo e imunidade do indivíduo. Dessa forma, o objetivo deste trabalho foi apresentar os alimentos funcionais probióticos e prebióticos, indicando as condições necessárias para que sejam categorizados como “probiótico” ou “prebiótico”, os principais microrganismos e compostos utilizados em produtos alimentícios, visando as funcionalidades à microbiota intestinal e, consequentemente, à saúde dos consumidores. Para isso, foi realizada uma revisão bibliográfica de publicações entre os anos de 2012 e 2023 nas plataformas Web of Science, Pubmed e Google Acadêmico, utilizadas para o levantamento de artigos científicos, e os sites “pesquisa.anvisa.gov.br”, “https://isappscience.org/” e Google, nos quais foram encontradas informações de mercado, guias e regulamentações.
