Os parabenos são uma classe de compostos que têm sido usados por quase 100 anos por suas propriedades antimicrobianas e antifúngicas. Porém, a alta concentração e frequência de detecção de parabenos em amostras biológicas indicam uma ampla exposição de diversas fontes, sendo uma das mais importantes os alimentos. Os parabenos tiveram grande expansão nas indústrias alimentícias como aditivos alimentares. Essa expansão e amplo uso de parabenos se deve as suas vantagens em relação aos outros conservantes, principalmente o baixo custo e a estabilidade química para um amplo intervalo de temperatura e pHs. Embora os parabenos sejam compostos eficientes que têm sido utilizados por muito tempo como conservantes, nas duas últimas décadas está em andamento a discussão entre diferentes entidades e comunidade científica sobre a sua ampla utilização, pois há uma preocupação crescente com os parabenos, principalmente devido à estudos demonstrarem que os parabenos atuam como desreguladores endócrinos (EDCs) interferindo no eixo hipotálamo-hipófise-gonadal e se comportando de forma semelhante aos hormônios femininos, bloqueando ou desestabilizando a ação hormonal normal, podendo apresentar atividade estrogênica e antiandrogênica, estando associados a tumores, nomeadamente tumores da mama, bem como à infertilidade masculina. Frente a isso, o objetivo deste trabalho foi realizar um levantamento bibliográfico sobre a utilização de parabenos como aditivos alimentares, com foco no seu impacto na saúde humana.
Parabens are a class of compounds that have been used for nearly 100 years for their antimicrobial and antifungal properties. However, the high concentration and frequency of detection of parabens in biological samples indicate a wide exposure to parabens from different sources, one of the most important being food. Parabens have had a great expansion in the food industries as food additives. This expansion and widespread use of parabens is due to their advantages over other preservatives, mainly their low cost and their chemical stability for a wide range of temperatures and pHs. Although parabens are efficient compounds that have been used for a long time as preservatives, in the last two decades there has been a discussion between different entities and the scientific community about their wide use, as there is a growing concern with parabens, mainly due to studies showing that parabens act as endocrine disruptors (EDCs) interfering with the hypothalamic-pituitary-gonadal axis and behaving similarly to female hormones, blocking or destabilizing normal hormonal action, and may have estrogenic and antiandrogenic activity, being associated with tumors, namely tumors of the breast, as well as male infertility. In view of this, the objective of this work was to carry out a bibliographical survey on the use of parabens as food additives, focusing on their impact on human health.
